I will be getting married next month (Dec. 2016), Can I apply for a visitors visa for my wife after the wedding considering that my own work permit will be expiring in May 2017.

You can apply for a TRV.

It will be tough though. She has to convince CIC she will leave Canada at the end of the authorized period. For this she will need to show she has enough funds to afford the trip on her own and the visit should be kept short (2-3 weeks).
