Is is just the raw method below-
Lets say 13/112015 to 13/11/2016, will that be 1 year ?

That should be one year unless your contract exclusively has some clause.

Weekends, holidays and vacation do not have to be deducted. Your employer puts the time frame of your employment in the work attestation letter, not the days worked. I also filed my application for the Quebec Experience Class the day I had been employed for exactly one year, even though I had a good month of vacation and it was fine.
