I'm a Canadian who wishes to return with my newborn from China. I know that it qualifies as a Canadian but I don't imagine the border will take my word for it that the baby is Canadian. The baby was registeredvas a Chinese citizen to make life easier for us in the duration of living there. But when we decide to move, what will we need to do? Apply for proof of citizenship, then a Canadian passport for the baby before returning to Canada?

Yes, apply for proof of citizenship through the embassy and if you don't have time to wait until you get it which can take several months, you can apply for a temporary passport or a facilitation visa with proof of travel.
