Guys,
Any info or tips to proceed are highly appreciated.

I got married to my girlfriend in December 2016 and thanks to the Ontario Govt. we received our marriage certificate couple of days ago. Our package is almost complete except for Birth Certificates.

She and I dated for long time but didnt get married coz her mom and I don't go along at all-- talk about bollywood storylines. Anyways, after futile attempts of convincing her we went ahead with the wedding anyways. My parents did approve and were present for the wedding.

So, I guess you get the gist here. There's no way I can get her mom's birth certificate. And, she lost her dad at a very early age. I was wondering I could explain this situation in a cover letter but thought there might be more/other options that can support my case.

Any tips?

You don't need her parents' birth certificates. Only submit your wife's.

You (the applicant) must provide the following (photocopies only) for yourself and your family members.

Birth Certificates for yourself and your family members, whether they are accompanying to Canada or not.

Am I interpreting it wrong?

Yes. Submit ONLY your wife's birth certificate.
"Family members
Your family members include your spouse or common-law partner, your dependent children and any children that are their dependent children."
