I have decided to go with applying under general category, even though I have 65% marks in Bsc Computer science but because of the 11 years gap.
1. My 11 years gap is like this: 5 years in India (1 year computer science teaching + 1 year software testing + 3 years BPO) and 4 years in Dubai (Sales & Marketing) and 2 years nothing in particular. With this kind of experience do you think Strategic Relationship Marketing is a good option for me? Do you have any other suggestions?
2. For showing financial proof I plan like this: Total one year fee is $12000. I will pay first semester fee from my savings. INR 9 Lakh I will show as education loan against Fixed Deposit. Is this okay? Do I need to show any other documents like Bank Statement or property docs anything like that?
3. I am really thinking what can I show as an alternative for ITR.

1. Please be clear. What exactly is your present occupation? As I said, In your case, your most recent work ex, and the field in which your work ex is longest, should be taken into consideration.
If your present occupation is related to Sales& marketing/Marketing Management/advertising/related field,
i.e If your immediate/current occupation is -- 4 years in Dubai (Sales & Marketing), then 1 year strategic relationship marketing programme at George Brown College, Toronto is an excellent choice.
But, If your immediate/current occupation is -- 2 years nothing in particular, then I'm afraid... getting a study permit will be difficult for you.
The question comes, what you were doing for past 2 years? Just because you were doing nothing in particular, so you are planning to run to Canada? This clearly kind of indicates, you are not a genuine student.. who is just looking a way out of Dubai... and this
looks bad on paper, doesn't matter what your real intentions are! Nevertheless, if you have say a particular job in this period of 2 years... you can try to find a course related to that.
2. If your course fees is 12,000$. then you will need to show an educational loan amount equivalent to atleast 80% of 12,000$+8,000$ (for living expenses)+2,000$ (better to show more as travel expenses) or 80% of 22,000$= 17,600$ or 9.85 lacs INR. Even though on checklist it is mentioned, that one needs to show only 80% of 1st year tuition fees +8,000$. But if you check the CIC website, they have clearly mentioned that one needs to have minimum 10,000$/Annum as living expenses(more for Quebec).

SO, personally.. I would reccomend: get an approved educational loan form 1 of the recognized banks for amount equivalent to: 80% of 12,000$+10,000$(living)+2,000$(travel) or 80% of 24,000$ = 19,200$ or 10.75 lacs INR.
3. What about ITR for the 1st 5 years you worked in India?
As I said, try to get Salary certificates form your current and previous employers, employment appointment letters+work experience. Anything and everything, which will prove authenticity to your employment record will be helpful. Apart form that, if you can show property papers in India(which proves you are financially well off) will be an added advantage. You can mention on your SOP clearly that in recent times, since you are in Dubai.. and the UAE does not have any federal income tax on wages or salaries, hence youa re providing alternative proofs such as salary certificates etc.
Overall, if your recent occupation is stable/sales& marketing, then by providing adequate supporting documents (including ITR for 1st 5 years in India) and attaching a good , precises, to the point short 1-1.5 pages SOP as to why you want to go to Canada, why you want to pursue this course and how it will help you in your career and future development... then..I think..you've got a good shot in getting the visa.
