when I apply for a visitor visa I noticed that they will not let you proceed with the application without providing all the documents they need which I find ridiculous.
I have applied for visas for the US, UK and other countries and gotten approved and no one does it online where you must submit all the documents to proceed. First of all I want to visit as a tourist not because I want to see someone so why do I need to submit a letter of invitation? I don’t have one and I’m sure there’s thousands of tourists that just want to visit the country to go to lake Louise or Quebec and the many wonders of Canada.

Edit your questionnaire where you answered that you are visiting someone in Canada, or similar. That should turn off the invitation letter requirement. Yes, you can do it on an application in progress.

The document checklist is generated by the answers to the questionnaire so you can play around with it to get the list that you want. Otherwise, just upload a brief explanation letter in that slot saying why it does not apply to you. It's not a big deal.

You also likely are eligible for CAN+ processing (expedited processing, financial documents not necessary) if you have an eligible passport at a participating visa office, so you can also upload a request letter to be considered.
