Type out the letter, print and sign it, then scan it along with your ROE and T4 into a single PDF. Or alternatively merge the 3 PDFs into a single PDF if you scan them separately. In your letter mention that you reached out to Walmart HR and they denied your request for such a letter as per their policy. The good news is, everyone at CIC has heard of Walmart before and they will completely understand. With a mom and pop shop they may want to contact them so I would suggest putting in contact info into the letter, but I'm guessing they wouldn't bother with Walmart.
I doubt the bank will be able to provide much in terms of proof of payment. What you could do is go online and get your own bank records showing the deposits, but again it's probably unnecessary. However by law an employer must provide you pay stubs even if they pay with direct deposit. I've never worked for walmart but they would have likely provided you with pdf stubs by email or more likely have an online system that you log into to download your stubs. I'm not sure if at this point it is too late to get them but I would not be concerned. Your T4 and ROE are better proof as they have been verified by the CRA anyway.

ROE is actually generated by the company (trust me, I've filled them out for my former employees) but it IS sent to the CRA (and by extension Service Canada) and is easily verifiable by CIC if they cared to check. So your point is valid, ROE is a good thing to submit.
