Hi,

A journeyman is someone who has completed an apprenticeship and is fully educated in a trade or craft, but not yet a master. Once completing his/her full training + apprenticeship in the trade (Cook in your case)... one gradually learns more and with years of work experience rises to become a top quality chef. Being journeyman entire learning process from an entry level Cook to a top grade chef.

If you see the Trade Secret website of Alberta govt., and see the Cook section, it is mentioned:

The total term of apprenticeship for a cook is 3 years (three 12-month periods) including a minimum of 1560 hours of on-the-job training and 8 weeks of technical training each year.

And if you complete the 2 years culinary Art diploma at NAIT (http://www.nait.ca/program_home_77767.htm), then as per Alberta apprenticeship and industrial training, you will get credit for 3 periods of technical training and 780 hours of on the job training.(http://tradesecrets.alberta.ca/trades-occupations/program-recognition/)

Hence, once you pass out from the NAIT Culinary Art diploma, you will just need to find a full time job as an apprentice (to complete your remaining 780 hours out of total 1560 hours, you need to complete Alberta trade apprenticeship requirement) and at same time apply directly for AINP nomination under Compulsory and optional trades criteria, and then apply for PR.

Once you complete your total 1560 hours of on the job training and finish your apprenticeship, then you will be a qualified journeyman in your trade, and while then keep on working and gradually become a master chef.

I hope everything is clear to you know. Please take some pain to go through all the official websites/links mentioned and understand this process of becoming a qualified trades-person in Alberta.
