Hello!

I have been working in Canada for a Non-Profit, volunteer based youthwork organization and was wondering if an unpaid position like that counts towards the Canadian Experience Class?

I haven't heard that volunteer work could make you eligible for any type of PR class (i.e. CEC or FSW). Atleast based on what I have read in both FSW and CEC we need to show paid TAX form (i.e. NOA or Notice of Assessment from Revenue Canada) or pay stubs as highlighted in the guide.

"Full-time work experience means working at least 37.5 paid hours per week."

So, no, volunteer experience does not count; neither does co-op nor self-employed work experience.
