My wife will be granted PR (I think). We will be moving to Canada soon. Her dependent child is "accompanying" but must finish High School before joining us in Canada. She will join us later. The question is: does the child need to come to Canada at the same time as us or she can join us later? Thanks you for your help. Mike.

She can join you later , just make sure she also goes for the medical exam with
your wife and she was declared on your wife application

If the child is "accompanying" as you mentioned, the mother and the child will both be issued the visa at the same time. About your question, Yes, she can join you later BUT make sure she lands Canada before the issued visa expires. Otherwise, the sponsoring of the child will start from Step 1 again.
