Age should not be a major concern, but if you are seriously interested in studying further then try applying into a University. They will respect your experience (as experience is a requirement in most of their PG courses) and applying to a University will inturn increase your VISA chances.
 
You will 100% get your student visa. There is no discrimination on the basis of age, gender, ethnicity or religion. Canadians respect all and give equality to all. If you have enthusiasm you will get the visa. Apply soon!!!!
 
And in my opinion, you have greater chances to get a student visa because you have the experience and knowledge which will be very useful in classroom. I know a person got visa in the age of 49, Currently he is studying in Concordia university. Go ahead

You can apply.

However, you must have some impressive work history (which you can show by way of ITR/FORM 16). I think you should try for MBA (Executive) Program. For this program, one need around 8 to 10 years of good work experience. This program might help you in covering your age/gaps. I do not see any logic for going to any PG level course in college. You should try only at University (probably for MBA-Executive program).

This is India and here CIC/CHC rules looks good only on paper, but not in reality. You really need to work hard with your overall profile/admission process.
