1 Year Work Experience with PGWP but still have Study Permit duration left

Hi,

I have my 3 years of PGWP starting from October 2018 because I applied right after I graduated my undergraduate studies at my university (Engineering degree). During the summer, I got an offer for my masters program (also Engineering degree) and I took it, and applied for study permit for 1 year. So my study permit is valid until August 2019. Here is where I'm making everything complicated: while doing school, I got a job offer that I'm interested in a lot so I want to take it and start in Jan (the job requires me to work from January 2019), and hold my master studies for a year. I'd like to work for a year, apply for PR through express entry, then go back to masters to finish it while waiting for PR. This seems like a perfect scenario where I will get my PR quickly (must faster than PNP option throught masters stream through Ontario which takes up to 16 months), work at a company I wanted to work for a year, and not give up my masters and continue after holding it for 1 year.

Q: If I work at this job from Jan 4th 2019 to Jan 4th 2020 and apply for Express Entry because I was working legally in Canada using my valid PGWP, would this count as my continuous work experience for 1 year? Even though I hold a study permit (but not a student)?
I am scared that my work experience will only count starting from when my study permit expires (from August 2019) because IRCC says work experience while holding study permit won't count. They may just consider Jan-August work experience as "Co-op"?
"Self-employment and work experience gained while you were a full-time student (such as a co-op work term) doesn’t count under this program."

Please help me out with this complicated situation, if my ideal situation would work, I would love to go for it! Thank you!!!
