is there any problem with proving my 1 year foreign work experience in PR application if i left Canada on flight on May 6 2015 and come back on flight on May 6 2016(if i state that i work for one year in my country starting from May 6 until May 6 2016)?

Yes, provided you have documents to prove your claim. As far as what I know, they are quite strict with the minimum 12 months requirement (1560 hours, i.e minimum 30 hours for 52 weeks)

Just to clarify two things:
- If your work started on May 6, 2015 then you can't submit an EE profile until May 6, 2016 passed
- It is impossible to accumulate the necessary hours in less than a year, even if you worked more than 30 hours per week. So unless you literally worked 30 hours every single week in that year (you can't count days you were on vacation), you won't be able to accumulate the necessary hours within exactly 365 days.
