0631 - Restaurant and food service managers

I worked as a Restaurant Manager for seven years in Pakistan and would like to apply to skilled worker category 0631 - Restaurant and food service managers and would like to know the following please:
1. Can I apply for Federal Skilled Worker category or Quebec Skilled Worker or both? Which one is better for me keeping in mind my circumstances? Which one is quicker?
2. I left the job last year in 2010 to move to Finland with my husband who is taking up a Ph.D. there. The restaurant has closed its business due to recession and market conditions in March 2011.
3.The Business Director who is retired now is willing to give me a recommendation letter for further job hunting and for immigration application purpose but is saying that his business address has been acquired by another business because he sold off the hotel building. In Pakistan, we use the word hotel, though it was a fast food restaurant mostly offering fried chicken, French fries and coke, desserts and sweets, cold drinks and ice-creams etc. (I hope you get the idea). Does it affect my application if I left the job about a year ago and more importantly, the business has shut down? Which address should the reference letter contain? The business address or the Director’s home address so if the CIC contact him by way of letter to verify my employment history, it reaches him. The director is informing that he will mention in the recommendation letter that the business is shut down in March 2011. I don’t want him to because it may harm my application, but he is not prepared to agree on that saying that he will indeed mention all the facts honestly and truthfully.
4. I am 29 years old female and have 7.5 score in IELTS valid until December 2012. I do not have any Restaurant Management qualifications as mostly hotel and restaurant staff is not qualified .I do not know an institute in Pakistan offering Hotel Management as a qualification. There are short courses indeed but not at a Bachelor or Master level. I have the B.A. degree which was of two years. Before, I had attended 12 years of continuous schooling. This situation is really a worry because I am told that you must have relevant qualifications which must very closely be associated with your profession otherwise you don’t get any points for the work experience.
5. I don’t even have food hygiene certificate though it was not necessary because I never cooked or prepared any food. I was responsible for other duties such as staff time-table and rota, training, monitoring of staff performances and resolve complaints if the customers had any. Assist the staff if they had any issues or grievances, update the computerised records on staff and more importantly control inventory management and getting the pricing etc. It was my duty to maintain hygiene and clean environment and that the orders are served or dispatched (in case of home delivery) in a timely manner. I also adjusted the meals and food prices according to seasonal and festive demands and maintained special offers such as Eid or Ramadan offers etc.
6. Though I don’t have a food hygiene diploma or certificate, I can obtain it if that helps my case. Please advise.
7. We have never been to Canada. My husband has a sister living in Vancouver. Will I get family points? She is not my blood relative, right? How does that work? My husband is a Chemical Engineer and his profession does not fall in the 29 Occupations list, so the only option is that I become the main applicant.
8. How can I know if the quota of 500 for this profession is filled or not? Any websites with regular updates?
9. If I qualify, how I should prove my employment history? I did not get any wages slip and I got the salary in cash and I signed a document that I received the salary. Because I did not earn a lot, I was exempt from Tax and never filed any tax returns. So, apart from my Director’s letter on his letter head and his business card, what else can I get or should attach to my application to prove my job? Please advise.

1. You can apply in both categories at the same time keeping in mind that QSW applicants need to have at least basic french language ability in order to qualify. Now a days FSW is quicker than QSW.

3. It does not affect at all if it was a fast food restaurant or you left job an year ago or business is closed now. The reference letter should be on Company Letter head and must have the Business address at the time you were working there. You should attach an explanation with the reference letter that the Business is closed. Give as much proof as possible to prove your job experience.

4. You do NOT need relevant Qualification in order to get Experience Points

7. You will get points for your sister-in-law even if you are the principal applicant, if your husband is an accompanying family member in your application.
