IIIT is not giving you a degree. It will give you a PG diploma.

Canadian companies don't give much weight to foreign job experience anyway. As long as the company you work for gives you the relevant experience letter, you won't face any difficulty in the CRS assessment. If you get any information contrary to it please share it with us.

I don't think that would be an issue. A lot of people study while working.
