I am pretty sure they are still waiting for the rest of the documents, since the application asks you what degrees you are uploading :) You can also call customer service to make sure in case you are anxious about it. They are very nice and try to help you as much as possible. Good luck!

I believe it doesn't have to be one employer, but it is certainly easier (in your case you will need a reference letter from both, and all of the other info required) :)

As far as I know, they will wait to receive everything and then start the evaluation, otherwise it will be viewed as incomplete. What does your status say in your WES account?
