Unfortunately i can’t see all the travel history because it only goes back 5 years. Should we still say the date we put on the application (same date on CBP stamp) and say we made a mistake because we thought it was the date of entry? Or say the date we found in traveller record in GCMS notes?

If you already included it in your application when it was submitted, there's no need to, unless they specifically ask in the letter you need to bring it during the interview. However, if you paid after submission you need to submit the receipt to case specific inquiry I've been following this...
