Yes it counts. Doesn't matter if you quit your job or got fired. All they care about is that you worked full-time for at-least 12 months. You don't even have to employed when submiting your application or during the process.

I'm sure you will get it before then. Just curious....are you going to do landing by going outside and then coming back to Canada?

You can be self-employed. As long as you have required experience you can quit job and be self-employed. CIC usually asks for extra documentsq. Nothing to worry about.
