My application has been sitting as in-process status since Jun. 6 and no update have been made since. Although I'm sure some people are still in the same situation, I am starting to get worried and impatient.

PGWP are usually open. If that's your case, then it's normal you cannot see a NOC code.
Either way, this should not have any impact on your application, except perhaps if you were working in an unauthorized NOC.
I sent whatever it was requested. From the top of my head, I sent the application filled by employer, job contract, a reference letter and a copy of my PGWP (I highlighted the section mentioning this so they won't miss it).
That means that final decision has been made. You were supposed to have gotten a letter or e-mail for RPRF and passport request. Make sure you didn't miss it.
That did not trigger mine to be rejected, although I have been in the same situation as you. But I have seem some cases in forums that claim to get rejected because of that (and caused me to panic).

One you identify your NOC, click on it, it will ask you about your Province then your City then it will provide detailed reports including the range of wages and the average
No one would know better than you what is the closest NOC number to your position. The NOC description/title do not need to perfectly match what your reference/employment letter as long as some/most of the duties described are similar.
When I got a positive LMO letter it was indicating my NOC...
