I am in the same situation. I extended my study permit in November and had to come back to India in 2nd week of December due to some family reasons. My TRV expired on 31st December 2023. I applied for new TRV on 13 December. I am currently waiting to hear back.

How many days does it take usually for stamping at IRCC? Today morning I received this message - Your application, tracking ID - X has been received and is under process at the IRCC Office on 8/13/2021 6:34:42 AM.

They work on weekends too.

Usually you wont get a date. After payment you will get another email with forms and AWB Number. After that delievery guy will contact you on your own(not sure about this) and will pick from your house.
