Not until you have your work permit. I only had to renew the medical from BC because it was expired, you'll have to check with your province.

IRCC says: "You can keep working past the expiry date on the letter until we process your application if the conditions are the same as on your original work permit." https://www.canada.ca/en/immigration-refugees-citizenship/services/work-canada/permit/temporary/extend/after-apply.html

I applied on May 1st and still nothing. At that time the processing time was 4 months, now it's 5.5 months, so you're still within the processing time.

I have the same question, in my case not all courses are offered in-person and the courses I want to take are online only due to the pandemic, as I understand it shouldn't affect the length of the PGWP.
