if you received AOR you need to click on the link in the email to the citizenship tracker. in any case, you need to wait 48-72 hours to be able to log into the tracker. the page you are talking about is not useful to applicants after you receive AOR.

you should probably use your local time and give yourself an extra week or 2 to remove any doubt? that's probably a bit easier than trying to do these timezone calculations

Approved in principle doesn't count towards citizenship. i'm not sure what PR date to use but for safety you could probably use the date stamped on your card. from what i hear, it can be difficult to count dates before you became a PR because sometimes that data isn't in the system. so better...

your application needs to be signed in canada. it's really up to you which day you want to do it.i doubt 1 day makes that much of a difference.
