My spouse got her SIN card today, applied on June 1st with unsigned COPR letter.

Only the applicants details (my wife) were in the document.

I think you can, but you might want to wait until you receive the PR confirmation email. I applied for my wife's SIN card with just the COPR letter, still waiting to hear back.

If you're able to login to ECAS it'll tell you your landed date: https://services3.cic.gc.ca/ecas/security.do?lang=en

In my wife's Confirmation of Permanent Residency letter it says: "If you do not have a (CoPR), please print a copy of this letter and send it to us along with one photo that meets our photo specifications to the address listed above; we will produce your permanent resident card once we receive it."

You'll get it a few business days later most likely, congrats!
