You can travel since you have a COPR under spousal sponsorship and have a spouse who is Canadian. What you may have read in other groups is around economic immigration streams where even those with approved COPRs cannot travel to Canada right now due to COVID.

The group is a group about Spousal Sponsorship so that's why I'm confused when I read that

As a spouse of Canadian Citizen, do I need a written Authorization Letter to travel to Canada? Or my COPR, Immigrant Visa and supporting documents (such as marriage certificate, husband's copy of passport) is enough?

You do not need a letter, the other docs are fine. You will need other covid preps like quarantine plan etc. Use the arrivecan app.
