I had started my own startup with 2 friends as co-founders on 1st August,2016. Till late october 2016 we were busy creating the product. We had started the process of registering the company in october as we knew that by october end we will be able to complete the product and we will be hitting the market by november. But the whole process was long and the company finally got registered on 23rd of november. Since, we had completed the product by october end we had started to pitch and sell our product to various companies. For the whole month of november we met with different people and came to a conclusion that our product was not a good fit for the market. So, in december starting we decided to carry on out with our jobs and stop what we were doing and wait around until the market changes or we found a new idea.

Now in express entry I have shown an employment of this company with the role I was performing in the company from August to November. Now I have received an LOI from Ontario. How can I prove my working in this startup from august while I have official document saying that the company got registered on 23rd Nov? Since we never did any business I do not have any invoices or client references as well. Will the mismatch in the dates cost me a rejection? If no what can I do to prove that I really was working at that time.

You need to show pay slips / deposits to prove you were workind and being paid a salary during this time.

That's the thing I was the owner I was not drawing any salary from the company. And the company got registered in november end.
If you weren't drawing a salary - then you cannot claim any of your start up experience as work experience. Only paid work experience can be counted as work experience.

So will the OINP just ignore this period and go ahead will my rest of experiences or can they reject my application?

I don't know the answer to this question.
