Is it important to do Rcmp fingerprinting and how long is the processing time for it?

It is not required with your application. You only need to do this if IRCC requests it.

Hi there
So we dont need to provide police check from Canada either?
If you have lived in Canada for over 6 months since turning 18, you will be asked to provide this at some point. IRCC will give you 1 month to provide this document.
You will have to go to your local RCMP detachment and ask for a criminal record check for immigration purpose. They will fingerprint you and give you a copy/acknowledgement of submission for verification. The report will come from Ottawa directly to your mailing address within 10 days if your profile search is negative, indefinite period of time is required if you have a history with them.

They ask from everyone? I thought it was selective.

No, they do not ask it of everyone. They do seem to ask it more of people from certain countries. Not sure if it has more to do with political/security concerns or with the perceived quality/reliability of the country's criminal records system...

What would those countries be if I may ask? Thanks
