Can i show my gratuity fund that I will get after I resign as a POF?

Probably not, as it's not available at the time of application, and it's not guaranteed. You can try but don't be surprised if it's rejected.
You can show but it is not likely that they will accept it as valid PoF.
I would say no, funds have to be readily available and transferable.
In that case money in PF account & mutual funds would also not be considered? Please share your views.
No. Mutual funds definitely not. PF, you can show. Accepting is up to them.
If you have PPF, you can show withdrawable balance on date.
