PCC date before I re-entered this country

I've been living in country A for the past 2 years now. Before that, I lived in country B for 10 years.

I applied for police clearance of country B in their embassy at country A. However, I need to later travel to country B to collect my work experience and bank statements. That is going to be the date after my police clearance of country B is given by their embassy. I'll be staying in country B for 3 days only.

CIC says "For countries in which the applicant no longer resides, the police certificate must have been issued after the last time the applicant lived in that country."

Is 3 days going to be considered as "living" and my police clearance be invalid then?

Yes it could potentially invalidate your PCC.
IRCC will know since you have to mention the trip in your travel history.

I'm not. Maybe the visa officer is in a good mood and he cuts you some slack, who knows. I said "could potentially". You can't rule out that possibility completely as IRCC website clearly states it has to be dated after you've left the country.
Ultimately it's up to you to decide if you want to risk it. I wouldn't if I were you.

I know someone who went for an emergency trip of 2 days & they rejected him stating that his PCC is incomplete. Please don't take any risks with your PCC; I feel it is one of the most common rejection grounds.
