Not sure if this has happened with anyone but we have a peculiar case. Our baby was born in UK (11 months now) and while filling out Canada Visitor Visa form we mentioned Country of issue as UK (Indian passport, but place of issue is London UK).
Visa was approved, however, today Air Canada denied us boarding (London to Toronto), stating there were issues in Visa application and country of issue should be India not UK.
How do we fix this issue as Visa is already approved? Is there a way to get this done quickly or we will have to wait for months before this can be done?

If baby is UK citizen then infant needed a ETA not TRV. Did you apply for ETA? You will need to contact IRCC and find out why denied boarding as AC would have been told by IRCC to deny boarding.

UK citizenship is not provided based on place of birth. Baby has Indian Passport, and Canada Visitor visa was approved.
Now all we have to do is ammend the details of "Country of Issue for Passport" as India (currently it is UK). Not sure if that can be done or we have to fill out new Visa form.

As you have figured out already the country of issue means which country issued the passport or which country the person is a citizen of so AC was right in denying boarding as they expected a UK passport.
I think your best bet is to submit a webform(if it's still a thing) with IRCC and request amendment. Clearly they missed to notice it too as the visa shouldn't have been approved at first place so give as much information as you can. They'll either fix it or ask you to reapply.

Whatever the final outcome will be, it won't be quick so you might have to sadly drop travel plans for now.
